DUTCH TOMATO SOUP

INGREDIENTS: 
  • 1/2 cup butter
  • 1 cup onion, diced
  • 1 cup celery, diced
  • 1/2 cup flour
  • 1 12oz can tomato paste
  • 1 15oz can beef broth, warmed
  • 1 cup uncooked long grain rice
  • 2 tsp dried parsley
  • 3 bay leaves
  • salt and pepper, to taste
DIRECTIONS:
  1. In a large pot, melt butter over medium heat, add onions and celery, stirring occasionally (about 10 minutes).
  2. Add flour and stir until mixture is slightly thickened and pale. 
  3. Stir in tomato sauce and tomato paste, beef broth, rice, parsley, bay leaves, salt and pepper. Reduce heat to low and simmer for 30 minutes.
