DUTCH TOMATO SOUP

INGREDIENTS:
- 1/2 cup butter
- 1 cup onion, diced
- 1 cup celery, diced
- 1/2 cup flour
- 1 12oz can tomato paste
- 1 15oz can beef broth, warmed
- 1 cup uncooked long grain rice
- 2 tsp dried parsley
- 3 bay leaves
- salt and pepper, to taste
DIRECTIONS:
- In a large pot, melt butter over medium heat, add onions and celery, stirring occasionally (about 10 minutes).
- Add flour and stir until mixture is slightly thickened and pale.
- Stir in tomato sauce and tomato paste, beef broth, rice, parsley, bay leaves, salt and pepper. Reduce heat to low and simmer for 30 minutes.
